define nutrition
• scientific study of food & how it nourishes the body
6 kinds of nutrients in foods:
• carbs • proteins • fats/oils • vitamins • minerals • water
organic means:
• containing carbon & hydrogen • carbs, lipids, proteins, vitamins
inorganic
• minerals & water
registered dietician nutritionists
• used evidence based practice
macronutrients
• required in large amounts • provide energy/fuel • carbs, lipids, proteins
carbohydrates
• primary fuel source for the body • fiber is type of carb
lipids
• insoluble in water • triglycerides are most common lipid in food
proteins:
• contain C,H,O AND Nitrogen • amino acids are building blocks • not primary source of energy
energy in food measurements:
• carb = 4 • protein = 4 • fat = 9 • alcohol = 7
major minerals:
• calcium, phosphorus, sodium, potassium, chloride, magnesium, sulfur • needed in amounts > 100mg/day
trace minerals:
• iron, zinc, copper, manganese, fluoride, chromium, molybdenum, selenium, iodine • needed in amounts < 100mg/day
dietary reference intakes (DRI):
• aim to prevent & reduce risk of chronic diseases • expand upon RDA • standards for healthy people
estimated average requirement (EAR):
• average daily intake level of nutrients to meet needs of HALF the healthy people in a particular group
recommended dietary allowance (RDA):
• average daily nutrient intake level that meets needs of 97% of healthy people in particular group
adequate intake (AI):
• used when RDA is not available • based on observed estimates
upper intake level (UL):
• highest average daily intake level likely to pose no risk of adverse health effects to most people
estimated energy requirement (EER):
• average dietary intake to maintain energy balance • defined by age, gender, height, physical activity • DRI for energy & macronutrients
acceptable macronutrient distribution range (AMDR):
• ranges of energy intakes from macronutrients
AMDR for macronutrients:
• carbs = 45-65% • fat = 20-35% • protein = 10-35%
malnutrition:
• nutritional status is out of balance • too much/too little of a particular nutrient over
primary deficiency:
• occurs when person does not consume enough of a nutrient • direct consequence of inadequate intake
secondary deficiency:
• person cannot absorb enough of a nutrient • too much nutrient is excreted from body • nutrient is not utilized efficiently
a healthful diet:
• adequate • moderate • nutrient dense • balanced • variety
