where do we find pectin?
in the cell wall
pectin consists of
• smooth regions • hairy or branched regions
pectin esterase
saponifies pectin with a high degree of esterification –> Methanol and pectin with lower degree of esterification are formed
Polygalacturonase (PG)
glycoside hydrolase active on pectic acid and pectin with low degree of esterification –> Endo- and exopolygalacturonase
pectate lyase (PAL)
cleaves glycosidic linkage of pectin with a low degree of esterification or pectic acid –> β-elimination, double bond is introduced
pectin lyase (PL)
cleaves glycosidic linkage of pectin with high degree of esterification
application of pectinases
• juice production • ripening veggies and fruit • upgrading agricultural residues
